I like Gyutos because they’re versatile enough for vegetables, meat, and fish, and the flatter profile works especially well if you don’t rock-chop much. Steel choice matters a lot with Gyutos though — some people love carbon steel for the edge feel, while others prefer stainless for lower maintenance. Either way, a well-made Gyuto can easily become your main daily knife.
