Hello everyone,
I’ve started making dried squid at home, and while the flavor turns out great, I keep running into one problem: the texture becomes extremely hard after a few days. At first it’s chewy in a nice way, but after storing it, it becomes tough enough that it’s not enjoyable anymore.
So my question is: what’s the best method to keep homemade dried squid fresh and still chewy—both during drying and during storage?
Should I adjust the drying time, reduce the heat, or store it in a different container? I’ve tried sealing it in an airtight jar, but the texture still changes.
